Balsamic Garlic Chicken

Chicken breasts are marinated in balsamic vinegar, garlic, and herbs, then cooked until tender with a lightly caramelized finish and balanced flavor.

Serves: 2–3 | Prep Time: 10 minutes (+ at least 30 minutes marinating) | Cook Time: 12–15 minutes

Ingredients

  • 2 boneless, skinless chicken breasts

  • 2 tablespoons balsamic vinegar (lower-sodium if available)

  • 1 tablespoon olive oil

  • 2–3 cloves garlic, minced

  • ½ teaspoon dried oregano

  • ½ teaspoon black pepper

  • ¼ teaspoon paprika

  • 1 tablespoon olive oil (for cooking)

Instructions

  1. In a bowl, whisk together the balsamic vinegar, olive oil, garlic, oregano, black pepper, and paprika.

  2. Add the chicken and turn to coat evenly. Cover and marinate for at least 30 minutes, or up to several hours in the refrigerator.

  3. Heat a skillet over medium heat and add the olive oil.

  4. Add the chicken and cook for 5–7 minutes per side, until fully cooked and lightly caramelized.

  5. Transfer to a cutting board and let rest for five minutes before slicing.

Cook’s Note

Slice and serve over grains, greens, or alongside roasted vegetables. For a brighter finish, add a small splash of balsamic vinegar or lemon juice just before serving.
