Creamy Walnut Sauce
A smooth, creamy sauce made with toasted walnuts, olive oil, and a touch of citrus. Rich yet balanced, this versatile sauce pairs well with vegetables, grains, fish, or pasta.

Ingredients
1 cup walnuts
1 cup salt-free vegetable broth
¼ cup extra-virgin olive oil
2 tablespoons fresh lemon juice
1 teaspoon lemon zest
1–2 garlic cloves (optional)
¼ teaspoon freshly ground black pepper
Instructions
Place the walnuts in a small saucepan, cover with water, and bring to a gentle boil. Cook for 5 minutes to soften and reduce bitterness.
Drain the walnuts and transfer to a blender or food processor.
Add the vegetable broth, olive oil, lemon juice, lemon zest, garlic (if using), and black pepper.
Blend until completely smooth and creamy.
Taste and adjust with additional lemon juice if needed for balance.
Use immediately or warm gently before serving.
Cook’s Note
For a thicker sauce, use slightly less broth. For a thinner consistency, add a bit more broth or warm water. This sauce can be made ahead and refrigerated for up to 3 days.
