Vanilla Poached Peaches
Peaches are gently poached in a light vanilla-infused syrup, creating a simple and elegant dessert that can be served warm or chilled.

Ingredients
4 ripe but firm peaches (halved and pitted, or left whole)
4 cups water
½ cup sugar
2 tablespoons fresh lemon juice
1 teaspoon vanilla extract
1 cinnamon stick (optional)
Instructions
Bring a large pot of water to a boil.
Score a small “X” on the bottom of each peach and lower it into the boiling water for 30–60 seconds.
Transfer immediately to cold water and peel off the skins.
In a saucepan, combine the water, sugar, lemon juice, and cinnamon stick if using, and bring to a gentle simmer.
Add the peaches and simmer gently for 15–20 minutes until tender but still holding their shape.
Remove the peaches and set aside.
Stir in the vanilla and continue simmering the liquid for 5–7 minutes to reduce slightly.
Return the peaches to the syrup and let cool slightly.
Serve warm or chilled with a spoonful of syrup.
Cook’s Note
For a more concentrated syrup, continue reducing the liquid for a few extra minutes. These peaches can be served on their own, with yogurt, or over cake.
