White Bean Purée

White beans are blended with olive oil, garlic, and a touch of acidity to create a smooth, balanced purée that works as a dip, spread, or base for a variety of dishes.

Ingredients

  • 1½ cups no-salt-added white beans, drained and rinsed

  • 1 tablespoon olive oil, plus more for serving

  • 1 tablespoon white wine vinegar

  • 1–2 teaspoons fresh lemon juice (optional)

  • 1 clove garlic, minced

  • ¼ teaspoon chili powder

  • 2 tablespoons oil-packed sun-dried tomatoes, finely chopped (optional)

  • 2 tablespoons fresh cilantro, chopped (optional)

  • Water, as needed for consistency

Instructions

  1. Add the olive oil, white wine vinegar, lemon juice if using, garlic, and chili powder to a food processor.

  2. Pulse briefly to combine.

  3. Add the white beans and process until smooth.

  4. Add a small amount of water as needed to reach your desired consistency.

  5. Taste and adjust with additional vinegar or lemon juice if needed.

  6. Transfer to a serving bowl and drizzle with olive oil before serving.

Cook’s Note

This purée can be used as a spread for sandwiches, a base for grain bowls, or served with vegetables or low-sodium crackers.
