Blueberry Cobbler
A warm, fruit-forward dessert with tender blueberries and a soft, golden topping. A touch of lemon balances the sweetness and enhances the natural flavor of the berries.
Serves: 6–8 | Prep Time: 15 minutes | Cook Time: 35 minutes
Ingredients
For the filling:
4 cups fresh or frozen blueberries
¼ cup sugar
1½ tablespoons flour
1 tablespoon fresh lemon juice
For the topping:
1 cup all-purpose flour
1½ teaspoons baking powder
2 tablespoons sugar
3 tablespoons unsalted butter, cold and cut into small pieces
½ cup milk
Instructions
Preheat the oven to 400°F. Lightly grease an 8×8-inch (2-quart) baking dish.
In a bowl, combine the blueberries, sugar, flour, and lemon juice. Toss gently to coat.
Transfer the mixture to the prepared baking dish and spread evenly.
In a separate bowl, combine the flour, baking powder, and sugar.
Add the butter and cut it in until the mixture resembles coarse crumbs.
Stir in the milk just until a soft dough forms.
Drop spoonfuls of the dough evenly over the blueberry mixture.
Bake for 30–35 minutes, until the topping is golden and the filling is bubbling.
Let cool slightly before serving.
Cook’s Note
If using frozen blueberries, do not thaw before baking. This helps maintain the proper texture and prevents excess liquid.
