Braised Red Cabbage with Apple Cider Vinegar

Red cabbage is gently braised with onion, apple cider vinegar, and a touch of sweetness, creating a tender, balanced side with vibrant color and depth of flavor.

Ingredients

  • 1 small head red cabbage (about 2 pounds), thinly sliced

  • 1 small onion, chopped

  • 1 tablespoon olive oil

  • ¼ cup water or low-sodium vegetable broth

  • 2 tablespoons apple cider vinegar

  • 1 tablespoon sugar or honey

  • ¼ cup raisins (optional)

  • ½ teaspoon black pepper

Instructions

  1. Heat the olive oil in a large skillet or sauté pan over medium heat.

  2. Add the onion and cook for 4–5 minutes until softened.

  3. Add the cabbage and stir to combine. Cook for 5–7 minutes, stirring occasionally, until it begins to soften.

  4. Stir in the water or broth, apple cider vinegar, sugar or honey, raisins if using, and black pepper.

  5. Cover and cook for 15–20 minutes, stirring occasionally, until the cabbage is tender.

  6. Uncover and cook for an additional 2–3 minutes, if needed, to allow excess liquid to evaporate.

  7. Taste and adjust with additional vinegar for brightness or a small amount of sweetener if needed.

  8. Serve warm.

Cook’s Note

For added depth, include a pinch of cinnamon or finish with a small splash of balsamic vinegar before serving.
