Lemon Chicken with Spinach

Chicken is gently cooked with shallots and fresh lemon, then finished with tender spinach for a light, balanced dish with a clean, flavorful pan sauce.

Serves: 4 | Prep Time: 10 minutes | Cook Time: 20 minutes

Ingredients

  • 4 boneless, skinless chicken breasts

  • 1 tablespoon olive oil

  • 1 shallot, finely minced

  • Zest and juice of 1 lemon

  • 2–3 tablespoons salt-free chicken broth

  • Freshly ground black pepper

  • 4 cups fresh spinach, roughly chopped

Instructions

  1. Heat the olive oil in a large skillet over medium heat.

  2. Add the shallot and cook for 2–3 minutes until softened.

  3. Add the chicken and cook for 5–6 minutes per side, until lightly browned.

  4. Add the lemon zest, lemon juice, and chicken broth. Reduce the heat to low, cover, and simmer for 6–8 minutes until the chicken is fully cooked.

  5. Add the spinach and cook until just wilted.

  6. Serve warm, spooning the pan juices over the chicken.

Cook’s Note

Serve with rice or cauliflower rice to absorb the flavorful pan sauce.
