Fresh Mozzarella & Tomato Stacks

Ingredients

For the Stacks

  • 4 large ripe tomatoes, sliced ¼-inch thick

  • 1½ pounds fresh low-sodium or salt-free mozzarella, sliced ¼-inch thick

  • Fresh basil leaves

  • Freshly ground black pepper

For the Vinaigrette

  • 3 tablespoons extra-virgin olive oil

  • 1 tablespoon balsamic vinegar

  • 1 small garlic clove, finely grated

  • Freshly ground black pepper

Instructions

1. Prepare the Vinaigrette

In a small bowl, whisk together the olive oil, balsamic vinegar, garlic, and a few grinds of freshly ground black pepper. Let the vinaigrette stand for about 10 minutes so the garlic can gently infuse the dressing.

2. Build the Stacks

Place one tomato slice on each serving plate or arrange the stacks on a serving platter.

Lightly spoon a small amount of vinaigrette over the tomato.

Top with one slice of mozzarella and a fresh basil leaf.

Repeat the layers two more times, finishing with mozzarella and a basil leaf on top.

Repeat with the remaining ingredients.

3. Finish & Serve

Lightly drizzle each stack with the remaining vinaigrette.

Finish with a few grinds of freshly ground black pepper and, if desired, a light drizzle of your best extra-virgin olive oil just before serving.

Serve immediately.

  • This recipe is at its best when tomatoes are fully ripe and in season.

  • If using store-bought mozzarella, choose the lowest-sodium fresh mozzarella available.

  • Assemble the stacks just before serving for the freshest presentation.

  • Because this recipe has so few ingredients, use the best-quality olive oil and balsamic vinegar you have.

Storage
