Angel Hair with Garlic Mushroom Sauce

A light, simple pasta with tender mushrooms and garlic in a flavorful sauce. Quick to prepare and perfect for an easy, satisfying meal.

Serves: 2–3 as a main, 4 as a light meal | Prep Time: 10 minutes | Cook Time: 15 minutes

Ingredients

  • 8 oz angel hair pasta

  • 2 tbsp olive oil

  • 2 cups mushrooms, sliced

  • 2 cloves garlic, minced

  • ¾ cup salt-free or no-salt-added vegetable stock

  • 1 tbsp lemon juice

  • Freshly ground black pepper

  • 1–2 tbsp fresh parsley, chopped

    Optional: 1 tbsp butter

Instructions

  1. Cook the angel hair pasta according to package directions without salt. Drain and set aside.

  2. Heat the olive oil in a large skillet over medium heat.

  3. Add the mushrooms and cook, stirring occasionally, until they release their moisture and begin to brown lightly.

  4. Add the garlic and cook for another minute.

  5. Pour in the vegetable stock, scraping up any browned bits from the pan, and bring to a gentle simmer.

  6. Stir in the lemon juice and black pepper.

  7. Add the cooked pasta to the skillet and toss gently to combine.

  8. Cook for another 1–2 minutes until everything is heated through.

  9. Remove from heat and, if using, stir in the butter until melted.

  10. Sprinkle with fresh parsley before serving.

Cook’s Note:

Add a splash of reserved pasta cooking water as needed to loosen the sauce and help it coat the pasta evenly.
