Ingredients
1 lb beef (sirloin or similar), sliced into thin strips
1 tbsp olive oil
1 tbsp butter
1 medium onion, chopped
2 cups mushrooms, sliced
2 cloves garlic, minced
1¼ cups salt-free or no-salt-added beef broth
¾ cup sour cream
1 tsp Dijon mustard
1 tsp low-sodium Worcestershire sauce
Freshly ground black pepper
For serving: Cooked egg noodles
Instructions
Heat the olive oil in a large skillet over medium-high heat.
Add the beef in a single layer and cook quickly until browned, about 2–3 minutes. Remove from the pan and set aside.
Reduce the heat to medium and add the butter.
Add the onion and cook, stirring occasionally, until softened and lightly golden.
Stir in the mushrooms and cook until they release their moisture and begin to brown.
Add the garlic and cook for another minute.
Pour in the beef broth, scraping up any browned bits from the pan, and bring to a gentle simmer. Allow the sauce to reduce slightly so it begins to thicken, about 2–3 minutes.
Return the beef to the pan and cook for a few minutes until heated through.
Remove the skillet from the heat before stirring in the sour cream, Dijon mustard, and Worcestershire sauce.
Season with black pepper.
Serve over cooked egg noodles.
Cook’s Notes
Do not overcook the beef—it should stay tender. Stirring in the sour cream off the heat helps prevent curdling.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently over low heat or in the microwave, stirring occasionally. If needed, add a splash of beef broth or milk to loosen the sauce.
