Bird in a Nest
A comforting breakfast passed down from GG, my husband’s grandmother, who gave this dish its name. Crisp toast and a soft egg come together in a simple, classic way.
Serves: 1 (per slice; multiply as needed) | Prep Time: 5 minutes | Cook Time: 5–6 minutes
Ingredients
1 egg
1 slice salt-free bread
Unsalted butter
Freshly ground black pepper
Instructions
Use a small glass or cutter to remove a circle from the center of the bread slice.
Lightly butter both sides of the bread.
Heat a skillet over medium heat and place the bread in the pan. Crack the egg into the center hole right away so it begins cooking evenly.
Cook until the bread is golden and the egg begins to set, about 2–3 minutes.
Carefully flip and cook until the egg reaches your desired doneness, adjusting the heat if needed to prevent over-browning.
Sprinkle it with black pepper and serve immediately.
