Bird in a Nest

A comforting breakfast passed down from GG, my husband’s grandmother, who gave this dish its name. Crisp toast and a soft egg come together in a simple, classic way.

Serves: 1 (per slice; multiply as needed) | Prep Time: 5 minutes | Cook Time: 5–6 minutes

Ingredients

  • 1 egg

  • 1 slice salt-free bread

  • Unsalted butter

  • Freshly ground black pepper

Instructions

  • Use a small glass or cutter to remove a circle from the center of the bread slice.

  • Lightly butter both sides of the bread.

  • Heat a skillet over medium heat and place the bread in the pan. Crack the egg into the center hole right away so it begins cooking evenly.

  • Cook until the bread is golden and the egg begins to set, about 2–3 minutes.

  • Carefully flip and cook until the egg reaches your desired doneness, adjusting the heat if needed to prevent over-browning.

  • Sprinkle it with black pepper and serve immediately.
