Instructions
1. Roast the Carrots
Preheat the oven to 425°F.
Place the carrots on a rimmed baking sheet. Add the olive oil, cumin, and black pepper and toss until evenly coated.
Spread the carrots in a single layer and roast for 20–25 minutes, turning once, until tender and lightly caramelized.
2. Prepare the Couscous
Place the couscous and golden raisins in a medium heatproof bowl.
Bring the water or No Salt Added vegetable broth to a boil. Pour it over the couscous, stir once and cover tightly.
Let stand for 5–7 minutes, or until the liquid is absorbed. Fluff thoroughly with a fork and allow it to cool slightly.
3. Make the Dressing
Whisk together the orange juice, lemon juice, orange zest, olive oil, cumin, and black pepper in a small bowl or glass measuring cup.
4. Assemble the Salad
Add the roasted carrots, scallions, parsley, and mint to the couscous.
