Grilled Lemon Garlic Artichoke Hearts

Grilled artichokes feel special but are surprisingly simple once you’ve made them. Lemon and garlic keep the flavor bright, while a light char adds depth.

Serves 4 | Prep Time: 15 minutes | Cook Time: 25–30 minutes | Total Time: ~45 minutes

Ingredients

  • 4 whole artichokes

  • 2 tbsp olive oil

  • 2 cloves garlic, minced

  • Juice of 1 lemon

  • Freshly ground black pepper

Instructions

  1. Trim the artichokes by cutting off the top third and removing the tough outer leaves. Trim the stems so they sit flat, then cut each artichoke in half lengthwise. Remove the fuzzy choke from the center.

  2. Bring a pot of water to a boil and steam the artichoke halves for 15–20 minutes, until just tender. Drain and let cool slightly.

  3. In a small bowl, stir together the olive oil, garlic, lemon juice, and black pepper.

  4. Brush the mixture over the artichokes, coating them well.

  5. Preheat a grill or grill pan to medium heat. Place the artichokes cut-side down and cook for 5–7 minutes, until lightly charred. Turn and cook for another 2–3 minutes.

  6. Serve warm.

Cook’s Note

Don’t skip the steaming step — it helps the artichokes turn tender before they hit the grill. If you want a little more depth, add a pinch of smoked paprika or red pepper flakes to the marinade. A final squeeze of lemon right before serving brightens everything.
