Sweet Peas & Tomatoes Over Pasta
A quick, fresh pasta that highlights the vibrant, natural flavors of peas and tomatoes, finished with simple herbs and olive oil.
Serves 4 | Prep Time: 15 minutes | Cook Time: 20 minutes | Total Time: ~35 minutes
Ingredients
1 lb pasta (linguine, spaghetti, or fettuccine)
1½ cups fresh or unsalted frozen peas
4 ripe plum tomatoes, chopped
1 small onion, finely chopped
3 cloves garlic, minced
3 tbsp olive oil
2 tbsp fresh parsley, chopped
Fresh basil
Freshly ground black pepper
Instructions
Cook the pasta according to package directions without adding salt. Reserve ½ cup of the cooking water, then drain and set aside.
While the pasta cooks, heat olive oil in a large pan over medium heat. Add the onion and cook for 5–7 minutes, until softened.
Add the garlic and cook for 30–60 seconds, until fragrant.
Add the tomatoes and cook for about 8–10 minutes, stirring occasionally, until they begin to break down.
Stir in the peas and cook for 3–5 minutes, until tender.
Add the pasta to the pan and toss to combine. Add a small amount of reserved pasta water if needed to loosen the sauce.
Remove from heat and stir in parsley, basil (if using), and black pepper.
Serve warm.
Cook’s Note
For a slightly richer finish, drizzle with a little olive oil just before serving. This dish also works well slightly cooled.
