Lemon Garlic Vinaigrette

A bright, clean vinaigrette made with fresh lemon juice and garlic. Light, balanced, and versatile, it brings fresh flavor to salads, vegetables, and simple grain dishes.

Makes about 1/3 cup

Ingredients

  • 3 tbsp fresh lemon juice

  • 2 tbsp olive oil

  • 1 small clove of garlic, finely minced

  • Freshly ground black pepper

Instructions

  1. In a small bowl, whisk together lemon juice and garlic.

  2. Slowly drizzle in olive oil while whisking to combine.

  3. Season with freshly ground black pepper.

  4. Taste and adjust with additional lemon juice if desired.

Cook’s Note

For a smoother flavor, let the vinaigrette sit for 5–10 minutes before using, allowing the garlic to mellow.
