Lentil Salad with Lemon, Herbs & Balsamic

Hearty lentils are tossed with fresh herbs, tomato, and a light balsamic-lemon dressing for a bright, satisfying dish that is quick to prepare and works as both a side and a light main.

Serves 6 | Prep Time: 10 minutes | Cook Time: 20–25 minutes | Total Time: 30–35 minutes

Ingredients

  • 1 cup dried lentils

  • 3 cups water

  • 2 tbsp olive oil

  • 1 tbsp balsamic vinegar

  • 1 tbsp lemon juice

  • 1 clove garlic, minced

  • 1/4 cup red onion, finely chopped

  • 1/2 cup tomatoes, chopped

  • 1 tsp fresh tarragon, finely chopped

  • 1–2 tbsp fresh parsley, chopped

  • Freshly ground black pepper

Instructions

  1. Rinse lentils and place in a pot with water.

  2. Bring to a boil, then reduce the heat and simmer for 20–25 minutes, until tender but not mushy. Drain well.

  3. While still slightly warm, transfer lentils to a large bowl.

  4. Add olive oil, balsamic vinegar, lemon juice, garlic, and black pepper. Toss to coat evenly.

  5. Add the red onion, tomatoes, tarragon, and parsley.

  6. Let it sit for 10–15 minutes before serving to allow the flavors to develop, making the dish more flavorful and rewarding to enjoy.


Cook’s Note

Allow the lentils to absorb the dressing while still warm, which helps the flavors develop and results in a more balanced, cohesive dish without extra salt.
