Chilled Asparagus Soup with Lemon

A simple, fresh spring soup with bright lemon and clean asparagus flavor. Served chilled, it’s light, smooth, and easy to prepare.

Ingredients

  • 1 lb asparagus, trimmed

  • 1 tbsp olive oil

  • 1 small shallot, finely chopped

  • 1 clove garlic, minced

  • 2 cups unsalted chicken broth

  • Juice of 1 lemon

  • Freshly ground black pepper

Instructions

  1. Cut the asparagus into 1-inch pieces, reserving a few tips if desired.

  2. Heat olive oil in a saucepan over medium heat. Add the shallot and cook for 2–3 minutes, until softened.

  3. Add the garlic and cook for 30–60 seconds, until fragrant.

  4. Add the asparagus and cook for 3–4 minutes, until slightly softened but still bright green.

  5. Pour in the chicken broth and bring to a gentle simmer. Cook for 8–10 minutes, until the asparagus is tender.

  6. Remove from heat and let cool slightly, then blend until smooth.

  7. Stir in the lemon juice and black pepper.

  8. Chill for at least 1–2 hours, until fully cold. Serve chilled.

Cook’s Note

For a slightly richer texture, blend in a spoonful of plain yogurt. For an extra-smooth finish, strain the soup after blending if desired.
