Roasted Eggplant with Tomatoes and Caramelized Onions

Ingredients

For the Eggplant

  • 2 medium eggplants, approximately 1 pound each

  • 2½ tablespoons olive oil

  • ½ teaspoon ground cumin

  • 2 large yellow onions, thinly sliced

  • 1½ tablespoons olive oil

  • 2 tablespoons water, plus more as needed

  • 2 garlic cloves, finely minced

  • ½ teaspoon ground cumin

  • ¼ teaspoon smoked paprika

  • 1 tablespoon red wine vinegar

For Assembly

  • 4 Roma or plum tomatoes, cut into ¼-inch slices

  • 1 tablespoon olive oil

  • ¼ teaspoon freshly ground black pepper

  • 2 tablespoons chopped fresh flat-leaf parsley or mint, or a combination

  • Additional red wine vinegar, optional

Instructions

1. Roast the Eggplant

Preheat the oven to 425°F. Line two large rimmed baking sheets with parchment paper.

Trim the eggplants and cut them crosswise into ½-inch-thick rounds. Arrange the slices in a single layer on the prepared baking sheets.

Brush both sides lightly with the olive oil and season evenly with the cumin and black pepper.

Roast for 15 minutes. Turn the slices and rotate the baking sheets from top to bottom. Continue roasting for 10–15 minutes, until the eggplant is tender and lightly browned.

Remove from the oven and reduce the oven temperature to 375°F.

2. Caramelize the Onions

While the eggplant roasts, heat the olive oil in a large skillet over medium heat.

Add the onions and cook for 5 minutes, stirring frequently, until they begin to soften. Reduce the heat to medium-low and add 2 tablespoons water.

Cook for 25–35 minutes, stirring occasionally, until the onions are deeply golden. If they begin sticking, add additional water 1 tablespoon at a time and scrape up the browned bits from the skillet.

3. Season the Onions

Add the garlic, cumin, and smoked paprika. Cook for approximately 1 minute, stirring constantly.

Remove the skillet from the heat and stir in the red wine vinegar.

4. Prepare the Tomatoes

Arrange the tomato slices on a clean kitchen towel or several layers of paper towels. Blot gently to remove excess moisture.

Drizzle approximately 1 teaspoon of the olive oil over the bottom of a 9-by-13-inch baking dish.

5. Assemble the Dish

Arrange half of the roasted eggplant in the prepared baking dish, overlapping the slices slightly if necessary.

Top with half of the tomatoes and half of the caramelized onions. Repeat with the remaining eggplant, tomatoes, and onions.

Drizzle with the remaining olive oil and sprinkle with the black pepper.

6. Bake

Bake uncovered at 375°F for 15–20 minutes, until the tomatoes have softened slightly and the layers are heated through.

7. Rest and Serve

Let the dish rest for 10 minutes.

Sprinkle with the parsley, mint, or a combination of both. Taste and add a light splash of red wine vinegar if additional brightness is desired.

Serve warm or at room temperature.

Cook’s Note

  • Choose medium eggplants that feel firm and heavy for their size. Leave the skin on to help the slices retain their shape.

  • Brush the eggplant with oil and arrange it in a single layer so it roasts rather than steams. Roast in batches if necessary.

  • Roma or plum tomatoes work best because they contain less liquid. Blotting the slices helps prevent a watery finished dish.

  • Parsley gives the dish a clean finish, while mint adds a brighter Mediterranean flavor. Fresh basil may also be used when tomatoes are at their peak

Make Ahead

The eggplant may be roasted up to 1 day ahead, and the seasoned caramelized onions may be prepared up to 2 days ahead. Refrigerate them separately in airtight containers.

Assemble shortly before baking for the best texture. The finished dish may also be baked several hours ahead and served at room temperature; add the fresh herbs shortly before serving.

Storage

Refrigerate leftovers in an airtight container for up to 3 days. Serve at room temperature or reheat in a covered baking dish at 350°F for 10–15 minutes.

Freezing is not recommended because the eggplant and tomatoes may become watery after thawing.
