Vanilla Poached Peaches

Ingredients

  • 4 ripe but firm peaches

  • 4 cups water

  • ½ cup sugar

  • 2 tablespoons fresh lemon juice

  • 1 teaspoon vanilla extract

  • 1 cinnamon stick, optional

Instructions

  1. Bring a large pot of water to a boil. Score a small “X” on the bottom of each peach and carefully lower the peaches into the water for 30–60 seconds.

  2. Transfer the peaches immediately to a bowl of cold water. When cool enough to handle, remove the skins, then halve and pit the peaches.

  3. Combine the 4 cups of water, sugar, lemon juice, and cinnamon stick, if using, in a wide saucepan. Bring to a gentle simmer, stirring until the sugar dissolves.

  4. Add the peaches and simmer gently for 15–20 minutes, turning occasionally, until tender but still holding their shape.

  5. Transfer the peaches to a serving dish. Discard the cinnamon stick and stir the vanilla into the poaching liquid. Simmer for 5–7 minutes, until slightly reduced, then pour the syrup over the peaches. Serve warm, chilled, or at room temperature

Cook’s Notes

  • Choose peaches that are fragrant and ripe but still firm enough to hold their shape during poaching.

  • Keep the liquid at a gentle simmer; boiling can cause the peaches to soften too quickly or break apart.

  • The cinnamon stick is optional and may be omitted for a cleaner vanilla flavor.

  • If you prefer a more concentrated syrup, remove the peaches and simmer the liquid for a few additional minutes.

Make Ahead

Prepare the peaches up to two days ahead and refrigerate them in their poaching liquid. Serve chilled or bring to room temperature before serving.

Storage

Refrigerate the peaches and syrup together in an airtight container for up to three days.
