Ingredients

  • 1 cup fine bulgur wheat

  • 2 cups boiling water

  • 1½ cups fresh parsley, finely chopped

  • ¼ cup fresh mint, finely chopped (or more to taste)

  • 1 cup scallions, chopped

  • 1½ cups Roma tomatoes, seeded and diced

  • Freshly ground black pepper, to taste

  • ½ cup finely shredded carrots (optional)

  • ⅓ cup fresh lemon juice

  • ⅓ cup extra-virgin olive oil

Instructions

1. Prepare the Bulgur

Place the bulgur wheat in a large bowl and pour the boiling water over it. Cover the bowl with a plate or lid and let stand until the bulgur has absorbed most of the liquid and is tender, about 20–25 minutes.

Transfer the bulgur to a fine-mesh strainer and gently press with the back of a spoon or rubber spatula to remove any excess moisture.

2. Prepare the Salad

Return the drained bulgur to the bowl. Add the parsley, mint, scallions, tomatoes, and the optional shredded carrots, gently tossing after each addition until evenly combined.

Season with freshly ground black pepper to taste.

3. Make the Dressing

In a small bowl, whisk together the fresh lemon juice and extra-virgin olive oil until well combined.

Pour the dressing over the salad and toss gently until everything is evenly coated.

4. Chill & Serve

Cover and refrigerate for 30–60 minutes before serving to allow the flavors to meld.

Serve chilled or slightly cool.

  • Fine bulgur wheat works best for a light, fluffy texture.

  • Fresh parsley is the star of traditional tabbouleh, while mint adds a refreshing accent. Start with ¼ cup of mint and feel free to add more to suit your taste.

  • Optional: Finely shredded carrots add a touch of natural sweetness, beautiful color, and a delicate texture while keeping the salad light and refreshing.

  • Taste again just before serving. As the salad chills, the lemon flavor mellows, so you may wish to add an extra squeeze of fresh lemon juice before serving.

Storage

Store in an airtight container in the refrigerator for up to 4 days. The flavors continue to develop during the first day, making this salad an excellent make-ahead recipe.
