¼ cup cornstarch
2 tablespoons fresh lemon juice
1 teaspoon finely grated lemon zest

Instructions
1. Prepare the Pastry Dough
In a large bowl, whisk together the flour and sugar.
Add the cold butter. Using a pastry cutter or your fingertips, work the butter into the flour until the mixture resembles coarse crumbs with some pea-sized pieces remaining.
Add 3 tablespoons of the ice water and gently stir with a fork. Add additional ice water 1 teaspoon at a time, just until the dough holds together when pressed.
Turn the dough onto a lightly floured surface and shape it into a disk. Wrap and refrigerate for at least 30 minutes.
2. Roll the Crust
On a lightly floured surface, roll the chilled dough into a circle approximately 12 inches in diameter.
Carefully transfer the dough to a 9-inch pie plate. Gently press it across the bottom and up the sides without stretching it.
Trim the dough, leaving approximately a ½-inch overhang. Fold the overhang under itself and crimp the edge as desired.
Refrigerate the shaped crust for 20 minutes.
3. Prepare the Oven
Preheat the oven to 375°F.
Position a rack in the lower third of the oven.
4. Blind-Bake the Crust
Line the chilled crust with parchment paper and fill it with pie weights or dried beans.
Bake for 18–20 minutes, or until the edges appear set and lightly golden.
Carefully remove the parchment paper and weights. Prick the bottom of the crust several times with a fork.
Return the crust to the oven and bake for an additional 10–14 minutes, or until the bottom is dry and golden.
Transfer the crust to a wire rack and let it cool completely before adding the filling.
5. Prepare the Berries
Rinse the berries only if necessary and dry them thoroughly.
Place 2½ cups of the berries in a medium saucepan. Set the remaining 3½ cups aside.
If using blueberries, crush approximately half of the berries in the saucepan with a potato masher or sturdy spoon.
If using raspberries, leave most of them whole; they will naturally break down as they cook.
6. Cook the Berry Filling
In a small bowl, whisk together the sugar and cornstarch until evenly combined.
Add the sugar mixture, lemon juice, and lemon zest to the saucepan.
Cook over medium heat, stirring frequently, until the berries release their juices and the mixture comes to a gentle boil.
Once bubbling, cook for 1–2 minutes, stirring constantly, until the filling is thick, glossy, and no longer cloudy.
Remove the saucepan from the heat and stir in the vanilla.
Let the cooked filling cool for 10 minutes, stirring occasionally.
7. Add the Fresh Berries
Gently fold the remaining 3½ cups of fresh berries into the warm cooked filling.
Take care not to crush the berries, particularly if using raspberries.
8. Fill the Pie
Spoon the berry filling into the completely cooled pastry crust.
Spread it evenly without pressing down on the fruit.
Let the pie stand at room temperature for approximately 20 minutes, then refrigerate it for at least 2 hours, or until the filling is fully chilled and set.
9. Serve
Remove the pie from the refrigerator approximately 15 minutes before serving.
Cut it into wedges using a sharp knife, wiping the blade clean between slices as needed.
Serve plain or with softly whipped cream.

Make Ahead

Storage
Cover the pie loosely and refrigerate for up to 3 days. It is best on the day it is assembled or the following day, before the fresh berries begin to soften.
