8 ounces mascarpone cheese, chilled
½ cup cold heavy cream
3 tablespoons confectioners’ sugar
1 teaspoon pure vanilla extract

Instructions
1. Prepare the Oven and Baking Dish
Preheat the oven to 375°F.
Lightly coat a 2-quart baking dish with a small amount of the melted butter.
2. Prepare the Apples
Peel and core the apples, then cut them into ½-inch wedges.
Place the apples in the prepared baking dish. Add 1 tablespoon of the granulated sugar, the lemon juice, lemon zest, cinnamon, vanilla, and remaining melted butter.
Toss gently until the apples are evenly coated, then spread them into a single layer.
3. Begin Baking the Apples
Bake the apples for 20–25 minutes, stirring once halfway through, until they have begun to soften but still hold their shape.
4. Add the Berries
While the apples bake, place the strawberries and raspberries in a medium bowl.
Sprinkle them with the remaining tablespoon of granulated sugar and toss very gently to combine.
Remove the baking dish from the oven. Add the strawberries and raspberries to the apples, folding them in carefully so the raspberries do not break apart excessively.
5. Finish Baking the Fruit
Return the baking dish to the oven and bake for 6–8 minutes, or until the berries are warmed through and have released some of their juices.
The apples should be cooked through, and the berries should remain largely intact.
Let the fruit rest for 5–10 minutes before serving.
6. Prepare the Vanilla Mascarpone Cream
Place the mascarpone, heavy cream, confectioners’ sugar, and vanilla in a large mixing bowl.
Using an electric hand mixer or stand mixer fitted with the whisk attachment, beat on low speed until the ingredients begin to combine.
Increase to medium speed and beat just until the mixture becomes smooth, light, and softly billowy, approximately 1–2 minutes.
Do not overbeat.
7. Serve
Spoon the warm baked fruit and some of its juices into individual dessert bowls.
Add a generous spoonful of cold vanilla mascarpone cream over or alongside the fruit.
If desired, finish each serving with a fresh raspberry or a very light dusting of cinnamon. Serve immediately.
Cook’s Notes
Choose firm, tart apples that hold their shape during baking, and cut them into evenly sized wedges.
Gently fold the berries into the apples so they remain mostly intact. Particularly sweet fruit may require less sugar.
Beat the mascarpone cream only until smooth and softly billowy; overbeating may cause it to separate.
Serve the fruit warm or at room temperature with the mascarpone cream well chilled.
Make Ahead
Prepare the vanilla mascarpone cream up to 1 day ahead, then cover and refrigerate. Whisk it briefly by hand before serving if necessary.
Peel and slice the apples up to 2 hours ahead. Toss them with the lemon juice, cover, and refrigerate.
