Ingredients
For the Salmon
4 salmon fillets (about 6 ounces each), skin on or off
2 tablespoons extra-virgin olive oil
Juice of 1 lemon
Freshly ground black pepper, to taste

2 cups ripe tomatoes, seeded and diced
½ cup finely chopped red onion
¼ cup chopped fresh sorrel, plus a few small leaves for garnish
1 tablespoon extra-virgin olive oil
¼ teaspoon salt-free chili powder
1 teaspoon finely grated lemon zest
Freshly ground black pepper, to taste
Instructions
Marinate the Salmon
In a shallow dish, combine the olive oil, lemon juice, and black pepper.
Add the salmon fillets, turning to coat both sides. Cover and refrigerate for 20 to 30 minutes.
Prepare the Salsa
While the salmon marinates, combine the tomatoes, red onion, chopped sorrel, olive oil, chili powder, and black pepper in a medium bowl.
Gently stir to combine and let the salsa stand at room temperature for about 20 minutes to allow the flavors to meld.
Cook the Salmon
Grill: Preheat a grill to medium-high heat. Grill the salmon for 4 to 5 minutes per side, depending on thickness, until the salmon is just opaque in the center and flakes easily with a fork.
Grill Pan: Cook over medium-high heat for about 4-5 minutes per side.
Oven: Bake at 400°F for 10 to 12 minutes, depending on thickness.

Sorrel has a bright, naturally lemony flavor that gives this salsa its distinctive character. If you can’t find fresh sorrel, substitute fresh flat-leaf parsley. The lemon zest in the recipe will still provide plenty of fresh citrus flavor.
