1 pound ripe Roma or plum tomatoes, seeded and divided
1 tablespoon No Salt Added tomato paste
⅓ cup freshly squeezed pink or red grapefruit juice
2 tablespoons freshly squeezed lime juice
½ teaspoon ground cumin
¼ teaspoon freshly ground black pepper
⅛ teaspoon cayenne pepper, or more to taste
1 small garlic clove, minced
¼ cup chopped fresh cilantro, divided
For the Shrimp Cocktail
1 cup diced English cucumber
¼ cup finely diced red onion
1 ripe but firm avocado, cut into ½-inch pieces
Lime wedges, for serving

Instructions
1. Prepare the Shrimp
If necessary, peel and devein the shrimp, leaving the tails attached or removing them as you prefer.
Pat the shrimp thoroughly dry with paper towels.
Keep the shrimp refrigerated while preparing the poaching liquid.
2. Prepare an Ice Bath
Fill a large bowl with ice and cold water.
Set it beside the stove so the cooked shrimp can be chilled immediately.
3. Poach the Shrimp
Combine the water, citrus peel, peppercorns, and bay leaf in a medium saucepan.
Bring the mixture to a boil over medium-high heat. Reduce the heat and simmer for 5 minutes to flavor the water.
Add the shrimp and adjust the heat to maintain a very gentle simmer.
Cook for 2–4 minutes, depending on their size, until the shrimp are opaque and curled into a loose C shape.
Do not allow the water to boil vigorously.
4. Chill the Shrimp
Use a slotted spoon to transfer the shrimp immediately to the prepared ice bath.
Let them stand for 2–3 minutes, or just until completely cool.
Drain thoroughly and pat dry with paper towels.
Cut each shrimp into two or three bite-size pieces, leaving several whole for garnishing if desired.
Refrigerate while preparing the remaining ingredients.
5. Prepare the Tomatoes
Cut approximately half of the seeded tomatoes into chunks and place them in a blender or food processor.
Dice the remaining tomatoes into approximately ½-inch pieces and set them aside.
If the diced tomatoes are especially juicy, let them drain in a colander for several minutes.
6. Make the Tomato-Citrus Sauce
Add the No Salt Added tomato paste, grapefruit juice, lime juice, cumin, black pepper, cayenne, garlic, and half of the cilantro to the tomatoes in the blender.
Blend until mostly smooth.
The sauce should have some body but remain loose enough to coat the shrimp and vegetables. If it is exceptionally thick, add another tablespoon of grapefruit juice.
7. Assemble the Cocktail
In a medium mixing bowl, combine the diced tomatoes, cucumber, red onion, shrimp, and remaining chopped cilantro.
Pour the tomato-citrus sauce over the mixture.
Fold gently until the shrimp and vegetables are evenly coated.
8. Chill
Cover and refrigerate the shrimp cocktail for 30 minutes.
This allows the flavors to develop while keeping the cucumber crisp.
Avoid chilling it for several hours after adding the shrimp, as the citrus can gradually firm its texture.
9. Add the Avocado

Make Ahead

Storage
