Sunday at Salt Free: Game Day Today, Dinner Tomorrow

‍ ‍Game Day Today, Dinner Tomorrow

Football season is underway, and Sunday afternoons are beginning to feel a little different. The television is on, people drift in and out of the kitchen, and dinner becomes less formal than it might be at another time of year.

Game-day food is often associated with heavily salted snacks, packaged sauces, and takeout. But a football spread can still feel generous, relaxed, and full of flavor without relying on any of those things.

This week, the centerpiece is our Smoky Barbecue Brisket with Homemade Salt-Free Sauce.

The brisket is coated with a smoky spice rub, slowly braised until tender, and finished with a homemade barbecue sauce prepared from its own cooking liquid. A few minutes beneath the broiler caramelizes the sauce around the edges, giving the meat the character of traditional barbecue without requiring a smoker.

It is also particularly well suited to a Sunday gathering because most of the cooking is gentle and unattended. The brisket can even be prepared ahead and reheated before serving, leaving more time to enjoy the afternoon.

For a casual game-day spread, serve it with something crisp and refreshing. Our Quick Pickled Cucumber Salad provides a bright contrast to the rich brisket, while Classic Tabbouleh Salad offers plenty of fresh herbs and lemon flavor.

There is no need to prepare an enormous assortment of food. One memorable main dish and one or two fresh sides can create a complete spread without turning Sunday into an all-day kitchen project.

One Sunday Dish, Two Easy Meals

The other advantage of making brisket on Sunday is knowing that part of Monday’s dinner is already waiting.

Reheat the leftover brisket gently with a small amount of its barbecue sauce, then serve it over Golden Couscous Salad with Roasted Carrots. The roasted carrots, warm spices, and fluffy couscous give the leftovers an entirely different character from the previous day’s football spread.

The brisket may also be served over rice, added to a grain bowl, or paired with simple roasted vegetables. It does not need to become an elaborate second recipe. The goal is to make Monday easier while ensuring that something prepared with care is not wasted.

That is one of our favorite ways to approach Sunday cooking: prepare something worth gathering around today and leave yourself a head start on tomorrow.
